A Recipe For Surviving The Holidays


Barbara: I figured at this time of year, a simple easy recipe is a recipe for surviving the holidays. Stefanie found this one online at Tastespotting.com and it soon became a go-to—everyone (except vegetarians, of course!) loves it, it is ridiculously easy to make, you can multiply the recipe very easily to feed a crowd, you can make it right before serving or the day ahead and re-heat, and you will have delicious leftovers. The original recipe is for 6 drumsticks or thighs, but I also adapted it for a crowd, using 3 full chickens cut up into 10 pieces each (separated thighs and drumsticks, each breast-half halved again, etc) so I can offer every type of meat to my guests. The changes to the recipe for larger quantities are in parentheses after each ingredient.

Sesame Ginger Chicken

Prep time: 10 mins
Cook time: 45 mins
Total time: 55 mins
Serves: 3-4 (… or a small crowd)

Ingredients
6 chicken drumsticks or thighs (or 3 whole chickens cut up—30 pieces)
Sesame oil
2 heaping tablespoons brown sugar (10 tbsp for 30 pieces)
3 heaping teaspoons toasted sesame seeds (15 tbsp for 30 pieces)
1 heaping teaspoon powdered ginger (5 tbsp for 30 pieces)
1 teaspoon salt (not times 5 for this, please! Use discretion…)
2 cloves garlic, finely minced (10 cloves for 30 pieces—I chop this in a small slicer)
Optional: 1 teaspoon cayenne pepper (love this!—but also don’t times-five it for more)

Instructions
Preheat oven to 425 degrees
Dry chicken thoroughly with paper towel and place in a bowl. Drizzle with sesame oil and toss to coat.
Combine all remaining ingredients in a small bowl and mix thoroughly.
Sprinkle sugar mixture over chicken and toss so that chicken is thoroughly coated.
Place chicken on a baking sheet, skin side up, and bake for 45 minutes or until the top is brown and crispy and the chicken is no longer pink inside.

Yum!

    I just spent all day at school giving a practical exam of 8 FRIGGIN HOURS!?!?!! Couldnt take a break so just ate a few chips at the desk whilst working on my 3d model on the software. I was sooo damn hungry when I got home and THANK GOODNESS I read this after eating pizza. If I had read this before eating I might just start munching my monitor! :D
    This recipe sounds super easy, all you....cook..um.....people must enjoy preparing it. :P

  4. When meals like this show up on the table us vegetarians tend to stick to the side dishes :)
    On an entirely unrelated note cough drops were on sale this morning at the drug store!! You guys have no idea how happy this made me. Cough drops are about the only thing I've been eating the past couple of days ;)

  5. Thanks, all! Kelly, that terrible cold has been making the rounds -- literally every person I know has it (or has had it!). Take care! Also, this recipe can be adapted for tofu -- not sure if you eat tofu, but I have to adapt all my meat recipes for my vegan daughter when she's home.

    1. I've made something really similar to this with tofu instead of chicken, then served it with a quick asian salad. Turned out really well! Btw I have some super easy delicious vegan cake/cupcake recipes if you ever want them for your daughter- I have a sweet tooth so have done a lot of research into finding the best! :)

  7. Wow! Thanks Barb! I made it and ate it!!! It is delicious and so so easy. I had a problem with my cookie sheet though, the juices leaked down and pooled at the bottom of my oven which then set off the smoke detectors, so there was great excitement and a lot of noise in my house for a little while. The windows are open and the oven is being cleaned (by itself) as we speak. Just a glitch on my part, but the chicken was delicious and the cayenne is a nice touch. Thank you for a new recipe.....it is never dull in my house :) xo
